I'm going to paint my room a light gray with a possible white accent wall, but I can't do anything about the trim, it there anyway that I can "cover" the effect the dark wood has on my new bright room?

I had that same problem before (my room has dark wood beams and  doors) because I wanted an all-white room too, although I’ve since changed my mind about it.  I now like dark trim and white together… :)  

What you can do is try to make it work with the new color scheme, if it isn’t possible to paint over the dark wood.  One way of doing that is adding furniture with the same shade of dark wood.  In my case, it was an accent chair (with white brocade upholstery, but with dark wood that nearly matches the beams), and dark striped rugs.  You can have fun with these rugs because you can change them when the mood suits you, but in a white room/light gray/monochromatic room, anything is possible.  It always looks well put together somehow.   Aside from rugs, the bed covers, pillowcases can be dark brown too.  

If you like, you can send a photo when you’re done and we’ll show it to everyone in the blog.  :)
